MENU

TURMERIC AND APRICOT BRAISED TEMPEH, TARO AND RUTABAG

Fermented tempeh is very easy on the digestive system, promoting powerfully healing probiotics, better digestion of food, and therefore better absorption of nutrients such as the rich omega 3 oils, calcium, and low fat protein that is naturally occurring. Bite sized cubes are marinated in circulation stimulating fresh ginger juice and tamari, coated with arrowroot to form a paper thin crust, combined with nutrient rich taro root and rutabaga, then braised with naturally sweet iron rich and good for the spleen and pancreas fresh apricots, anti oxidant rich turmeric, and a good for the liver, relaxing, light, and energizing scallion garnish.

 

LEMONY TRI ~ COLOR QUINOA MINTED TABOULI

Strengthening, good for the heart tri color quinoa, and good for the stomach and pancreas fresh chickpeas, are cooked with kombu sea vegetable and tossed with probiotic rich digestion friendly naturally pickled cucumbers and red radish, marinated with alkalizing umeboshi plums and good for the liver fresh lemon zest, then garnished with red blood cell chlorophyll-rich fresh green parsley and fragrant and refreshing fresh mint, to create this whole grain, bean and fresh vegetable meal in one Eastern Mediterranean inspired “salad”.

 

CHICK PEA HUMMOS WITH OLIVES AND PARSLEY

 A delicious blend of heart healthy chickpeas, cooked with mineral rich kombu sea vegetable to enhance the chickpeas flavor, digestibility, and mineral content, calcium-rich sesame tahini, liver cleansing lemon juice, alkalizing and digestive umeboshi plum, and a garnish of probiotic rich fresh olives and chlorophyll rich minced parsley.

Served with gluten-free Mary’s Gone Crackers and Flackers Organic Sprouted Flax Seed Crackers, Rosemary Flaxseed

 

FRESHLY TOSSED SALAD WITH SOUTH RIVER MISO VINAIGRETTE

 A beautiful and freshly tossed salad made with mixed green lettuces, liver healthy fresh arugula, naturally prebiotic freshly grated beets, beta carotene rich bright orange carrots, hydrating and delicious fresh cucumber, living food energy fresh sprouts, and a flavorful burst of fresh basil to finish. Tossed in an olive oil, umeboshi vinegar, and South River chickpea miso light, fresh, flavorful, and healthy vinaigrette like no other!
